Tradition and authenticity: our Silvia likes to be called ‘La Massaia’; the teachings of her grandmother Carola, her mother Mirella and aunt Egle, all strong women from families of charcoal burners and woodcutters in the Casentino area, help her to create dishes from the past.
A simple cuisine with ancient flavours like her grandmother used to prepare for everyone in the hut in the woods, next to the wood that burned into charcoal. This is the vision Silvia has in her head during the creation and preparation of the dinner.
Silvia, born and raised in Rapolano Terme, knows the area by heart: the routes on foot, horseback or bicycle, the plants in the woods surrounding Laticastelli, the stories of ancient places and the legends of enchanted castles.
Her greatest passion, food and cooking, has always accompanied her in her choice of hotel management school, in her own management of the Rosticceria di Rapolano where they all bought the fresh pasta prepared by Silvia, and in the many jobs always in the field of hospitality with the organisation of festivals, events and fairs so that everyone could taste Tuscan home cooking. The close collaboration with small local producers makes each of her dishes unique.
